Mixed Vegetable Curry – A Nutritious Delight

Mixed Vegetable Curry, also known as Mix Veg Curry, is a wholesome North Indian dish prepared by combining a variety of vegetables and paneer cubes in a flavorful gravy. Ingredients

For the Gravy:

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 large tomatoes, pureed
  • ½ cup whisked yogurt (optional)
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder

Instructions

1. Prepare the Gravy

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions and sauté until golden brown.

  4. Add the pureed tomatoes, red chili powder, turmeric powder, and salt. Cook until the oil separates from the masala.

2. Cook the Vegetables
